Grilled Sweet Potatoe

A straightforward recipe for grilled sweet potatoes with fresh thyme, salt, and pepper. They combine well with almost any grilled protein, particularly burgers! Vegan and gluten-free.

Grilling adds a lot of flavor to meals, so when the weather is great, I try to convince Isaac that we should grill everything! Throughout the summer, we barbecue virtually every day.

Grilled protein options include turkey burgers, chicken, tofu, shrimp skewers, and BBQ tempeh. However, I also enjoy cooking fruits and vegetables.

We've tried grilled pineapple, grilled peaches, grilled avocado (so creamy and wonderful), and a variety of grilled vegetables. We've probably grilled almost every vegetable you can think of.

Most recently, I tried my hand at grilled sweet potatoes, which were just as amazing as I had hoped!

Sweet potatoes are a powerful veggie! They're loaded with fiber, vitamins, and minerals. They are also abundant in antioxidants, which assist your body resist free radical damage. 

According to studies, sweet potatoes have a good impact on stomach, brain, eye, and immune health. Furthermore, some research suggests that specific antioxidants found in sweet potatoes may protect against some malignancies. 

Bottom line? They're incredibly nutritious and delicious! There are no excuses for not incorporating them into your diet.  (Source)
