Golden Apple Pie

– 6 cups sliced peeled Golden Delicious apple – 3/4 cup plus 2 tablespoons apple juice, divided – 3/4 cup sugar


– 1 teaspoon ground cinnamon – 1/2 teaspoon apple pie spice – 2 tablespoons cornstarch – 1/4 teaspoon vanilla extract


crust: – 2-1/2 cups all-purpose flour – 1 teaspoon salt – 1 cup cold butter – 6 to 8 tablespoons ice water



Stir occasionally as apples, 3/4 cup apple juice, sugar, cinnamon, and apple pie spice cook in a large saucepan over medium heat.   

Stir cornstarch and remaining apple juice into pot. Stir frequently and boil again. Cook and stir 1 minute more to thicken. Get off the heat. Mix in vanilla.   

Cool to room temperature, stirring periodically.Cut butter into flour and salt to make a crumbly crust. Add water 1 tablespoon at a time and toss with a fork until dough forms a ball.   

Make one piece slightly larger and divide in two. Roll out larger quantity on lightly floured surface. Line bottom crust of 9-inch pie plate and trim to edge.   

Add filling. Roll remaining dough to fit pie top; lay over contents. Trim, seal, flute edges. Slit top.  

Bake 40–45 minutes at 400° until crust is golden brown and apples are soft. Wire-rack cool.
