Earl Grey Latte Chia Pudding

This creamy, naturally vegan earl grey latte chia pudding is fragrant and warm with vanilla. Perfect as a light dessert, snack, or even breakfast!  

– 4 cups boiling water – 3 earl grey tea bags, see note – 1 cup raw cashews, soaked for at least 2 hour – ⅓ cup maple syrup

Ingredients:

– 1 tablespoon vanilla bean paste – ¼ teaspoon fine sea salt – ½ cup chia seed

Ingredients:

Place tea bags in a big spout-equipped liquid measuring cup or basin. Pour boiling water over the tea and whisk. Steep for 4 minutes.  

After steeping, remove the tea bags and let it cool. Rinse and mix cashews in a high-speed blender. Add maple syrup, vanilla bean paste, and sea salt to cashews.  

Blend the cooled earl grey tea. Blend the contents for 1 minute on high until silky smooth.  

Put chia seeds in a big basin. Add earl grey cashew milk to chia seeds and stir briskly. Leave the bowl covered in the fridge for at least 2 hours, preferably overnight.  

Earl grey latte chia pudding should be thick when ready. Stir it right out of the fridge.  

Serve it in tiny dishes or glasses with vegan vanilla yogurt, strawberries, and dark chocolate shavings.
