Walnuts give this healthful banana nut bread texture and flavor. For additional sweetness, use very ripe bananas with brown spots or black bananas. Banana nut bread is soft and caramelized.
3/4 cup all-purpose flour ¾ cup whole-wheat flour 1 tsp baking soda 1/2 tsp cinnamon
1/4 tsp salt 1/8 tsp ground nutmeg 3/4 cup granulated sugar 1/2 stick unsalted butter, softened
2 big egg 1/4 cup vegetable or canola oil 1 tsp vanilla 3 ripe, large bananas, mashed (1 1/4 cups) ¼ cup plain whole-milk yogurt ¾ cup toasted, split chopped walnuts (see to Tip)
Preheat oven to 350°F. Lightly spray a 9-by-5-inch loaf pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on long sides.Mix all-purpose flour, whole-wheat flour, baking soda, cinnamon, salt, and nutmeg in a small basin.
Mix sugar and butter in a large bowl with an electric mixer on medium speed for 3–5 minutes until butter is lightened in color and well integrated. Pour in eggs one at a time and beat for 1 minute, scraping sides as needed.
Beating oil and vanilla takes about a minute. Add bananas and mix for 1 minute. Add yogurt and flour mixture alternately, mixing for 30 seconds per batch until just blended.
Stir in 1/2 cup walnuts with a spatula. Pour batter into pan. Evenly sprinkle the remaining 1/4 cup walnuts. Bake until a wooden pick inserted in the center comes out clean, 50–60 minutes.
