Fajita Chicken Burrito Bowl offers a flavorful and satisfying meal that combines the bold flavors of fajita chicken with a variety of fresh ingredients, all served over a bed of fluffy rice.  

It's a versatile dish that allows you to customize your bowl with your favorite toppings and condiments, making it perfect for a quick and easy weeknight dinner or a fun build-your-own-bowl party with friends. Here's how to make it: 

1 pound boneless, skinless chicken breasts or thighs, sliced into thin strip 2 tablespoons olive oil 1 tablespoon fajita seasoning (store-bought or homemade) Juice of 1 lime Salt and pepper to taste

2 cups cooked rice (white or brown) 1 bell pepper, sliced 1 onion, sliced 1 tablespoon olive oil Salt and pepper to taste 1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, drained and rinsed 1 avocado, sliced 1/2 cup cherry tomatoes, halved Fresh cilantro leaves, for garnish Lime wedges, for serving

Shredded cheese Sour cream or Greek yogurt Salsa or pico de gallo Sliced jalapeño Sliced black olive Diced red onion Hot sauce

Marinate the Chicken: In a bowl, combine the sliced chicken, olive oil, fajita seasoning, lime juice, salt, and pepper. Toss until the chicken is evenly coated. Let it marinate for at least 15 minutes, or refrigerate for up to 4 hours for maximum flavor.

Cook the Rice: Prepare the rice according to package instructions. You can use white or brown rice, depending on your preference. Once cooked, fluff the rice with a fork and set it aside.

Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell pepper and onion to the skillet, season with salt and pepper, and cook until they are tender and slightly caramelized, about 5-7 minutes. Transfer the cooked vegetables to a plate and set them aside.

Cook the Chicken: In the same skillet, add the marinated chicken slices in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly browned. Remove the skillet from the heat and set it aside.

Assemble the Burrito Bowls: Divide the cooked rice among serving bowls, creating a base for the burrito bowls.Arrange the cooked fajita chicken, sautéed bell peppers, onions, corn kernels, black beans, avocado slices, and cherry tomatoes over the rice in each bowl.

Garnish and Serve: Garnish the burrito bowls with fresh cilantro leaves and lime wedges for squeezing over the top. Serve the bowls with optional toppings such as shredded cheese, sour cream or Greek yogurt, salsa or pico de gallo, sliced jalapeños, sliced black olives, diced red onion, and hot sauce on the side.
