– 2 1/2 cupall-purpose flour – 1/4 cupgranulated sugar – 1/4 cuppacked light brown sugar – 1 tablespoonbaking powder – 1/2 teaspoonkosher salt

Ingredients

– 6 tablespoon(3/4 stick) cold unsalted butter – 1 1/4 cupsemi-sweet or bittersweet chocolate chips (8 ounces) – 1/2 cupcold heavy cream – 1large egg – 2 teaspoonvanilla extract – 2 tablespooncoarse sugar, such as demerara, turbinado, or sugar in the raw (optional)

Whisk together 2 1/2 cups all-purpose flour, 1/4 cup granulated sugar, 1/4 cup packed light brown sugar, 1 tablespoon baking powder, and 1/2 teaspoon kosher salt in a large basin.

Step 1

Cut 6 tablespoons cold unsalted butter into 1/2-inch pieces. Scatter over the flour mixture and use your fingers or a pastry blender to massage the butter into irregular pea-sized crumbs with a few bigger flat bits. Add 1 1/4 cups chocolate chips and mix with hands.

Step 2

Whisk together 1/2 cup chilled heavy cream, 1 big egg, and 2 teaspoons vanilla extract in a small basin or liquid measuring cup. Pour into flour mixture and stir with spatula to moisten. To include all the flour, fold the dough three to four times with your hands.

Step 3

Place the dough on a parchment-lined baking pan. Make a rough 8-inch, 3/4-inch-thick ball of dough. Cut into 8 wedges with knife or bench scraper.

Step 4

Put the scones on the baking pan at least 2 inches apart. If desired, sprinkle 2 tablespoons coarse sugar equally and lightly push it into the scones to stick. Wait 15 minutes to refrigerate while the oven heats. Heat the oven to 400°F with a rack in the middle.

Step 5

Bake the scones for 15–17 minutes until the edges and bottom are golden brown. Sit the scones on a wire rack for 5 minutes after baking. Serve warm or room temperature.
