Chococonut Chip Cookie

These cookies with chocolate and coconut are quite delicious! While looking for a method to use the bag of coconut flakes that was sitting in the cupboard, I came up with this recipe one day. 

Ingredients

– 1 cup butter – 1 cup white sugar – ½ cup light brown sugar – 2 egg

– 1 teaspoon vanilla extract – 2 ¼ cups all-purpose flour – 1 teaspoon baking soda – 1 teaspoon salt

– 2 cups semisweet chocolate chip – 2 cups flaked coconut

Instructions

Set the oven's temperature to 375°F, or 190°C. 

In a large basin, beat together butter, white sugar, and brown sugar with an electric mixer until frothy and light.  

Mix the butter mixture with the first egg. Beat vanilla extract and second egg into mixture. 

In a separate basin, mix together the flour, baking soda, and salt; fold into butter mixture just until incorporated.  

Stir in coconut and chocolate chips. Drop dough spoonfuls onto ungreased cookie sheets, spacing them two inches apart. 

Bake for 8 to 10 minutes, or until the edges are golden, in a preheated oven. Let cool for a little while on the cookie sheets, then transfer to a wire rack to finish cooling.
